Following the astounding success of his sell out ‘Foraged and Forgotten Foods’ dinner at Boisdale of Canary Wharf, Miles Irving is to bring his unique knowledge of the wild food to the Boisdale’s countryside outpost The Lamb at Hindon this month for a late autumn feast of wild food and great wine.

Irving, the UK’s foremost food forager, has worked with Boisdale’s executive head chef Andy Rose to create an enticing three-course menu focusing on foraged foods from the meadows and hedgerows of the British countryside. The menu will be available for one night only at a dinner to be held at the Lamb, Boisdale’s Wiltshire country inn, on Tuesday November 20th. The evening will commence with a talk by Irving at 7pm, followed by dinner at 7.45pm. The cost for the evening is £30 per head inclusive of delicious wines from the Lamb’s own cellar.

Boisdale’s executive head chef Andy Rose comments, “At The Lamb we have long been championing ingredients and produce that can be found in the heart of the British countryside. The natural foraged ingredients that Miles brings to the table can be anything from much-sought-after luxurious foodstuffs such as wild mushrooms to classic flavours such as sorrel and nettle to the very unique and not-so-familiar flavours of sea buckthorn and meadowsweet. Miles’ unsurpassed knowledge of the countryside’s natural larder allows us to showcase the classic flavours that our guests expect alongside the unexpected new ones. Not only will customers have a superb meal, they will also have an opportunity to learn a thing or two about the wild foods they can pick up – quite literally – in their own back garden.”

Miles is an experienced forager and speaker who has worked with some of the UK’s most exacting chefs including Mark Hix, Richard Corrigan and Nathan Outlaw. During the event at The Lamb Irving will talk about basic foraging skills and general ways to prepare and eat the wild plants of the British Isles (there are over 365 of them – more than one for every day of the year). His talk will cover a host of intriguing ingredients including ‘parent plants’ of well-known cultivated vegetables, plants that have been with us since the last ice age, plants that have been newly introduced to the British countryside and plants that have long been revered for their medicinal and nutritional properties.
